Tutorial on Corn

Honestly this is for my own benefit so I don't forget. Here is how to prep freezer corn. Something I've done with my mom for years. 

My children love corn so this comes in handy during those winter months.

  First get your hands on a few hundred ears of corn. Make sure they are all shucked and de-silked. 

Having a cute 3 year old help you keeps it interesting,

Once the corn is ready you place a few ears into a microwave save container with lid. Add one cup of water and microwave on high for 4 mins. Place the steamed corn directly into ice water to flash freeze.

Once the corn is completely chilled (roughly 5 minutes) drain the corn.

You can simply place the whole cobs into a seal-a-meal bag. Suck out the air and seal. Then simply place in the deep freezer for later use. 

Option number 2: If you prefer your corn off the cob you can use a mandolin to slice the kernals off the cobs. You can use a knife but we have found that the mandolin is much more efficent for this task. Then spread the kernals onto a baking sheet and place in freezer for several hours. This hardens the individual kernals. Afterwards place desired portion into Seal-a-meal bags. Suck, Seal, and Freeze.

 It takes a few hours to finish the task but worth every bite in the end. So if you happen to have a bunch of corn on the cob you don't know what to do with try this. You will thank me later.

It was a whole family affair too. My dad and Katie shucked, my sister cooked and cooled, and me and my mom dried and sliced. Brady liked to eat anything left on the cob too.

The Cabin

My grandparents decided to build a "Cabin" at Scofield. The last time I was there the family was busy hanging sheet rock. It was so nice to see the whole thing finished. In the end it is more like a small house then it is a Cabin. My Grandparents joined us along with Chad, Sarah and their Kids. Chad was able to bring his new 2 man raft. The kids had a great time playing in the water. Amy joined us later in the evening to do some fishing. The second day we were there it rained most of the day. This meant less time on the water and more time playing games.
Just before Chad's family left poor Mikayla tripped down the cement stairs off the deck and got a huge  bump on her head. Poor thing. The following morning my cousin Les came up with his wife and 3 girls.  He brought his boat and was nice enough to take us all out to do some fishing. Some storms rolled in while we were on the lake and we had to race back to the cabin to get out the rain. This is not an easy task with so many little kids. We had a great time. Thanks Grandma for letting us play at your home away from home.

Fiesta Days

The 24th of July is Pioneer day in Utah, but in my home town it is Fiesta Days.

We started the celebration on Saturday night at the Rodeo. The Mutton busting was really fun to watch and Katie can't wait until she is old enough to do it herself. The rodeo was ok. It was as if I was watching a commercial for most of the night but the actual rodeo action was good.

We followed up the Rodeo with the Grand Parade on Tuesday. The kids loved gathering candy and Brady was really good at waving at the cute girls on the royalty floats. We browsed through all of the booths/boutiques, which is always a highlight for me.

Finally my Uncle Chris reserved the perfect seats on the side of the road for our family to watch the fireworks.
